Sorry it's been so long since I've posted.  I've been working a lot now that it's summer.  So that's part of it.  There also hasn't been a whole lot going on...pretty boring.  Not that there's so much going on now, but I just saw that it had been awhile since I had posted so I decided I would. 

It's still pretty warm, but not as bad as it was when I last posted.  I still wish it was 40-60 degrees.  I love those temps.  Love snuggling under the covers at night, not lying in bed with the fan going constantly.  I loved wearing my long denim skirts and a sweater.  I think I should move to Alaska. 

Anyway, after work tomorrow I'm meeting mom and dad in Durand for a picnic.  They're bringing the puppies too.  It should be fun. 

Anyway, I guess that's about it for now.

Today it was quite warm here-it almost makes me miss the 45 that we had last week...Especially at night when I just want to snuggle under my covers.  But I'm warm just sitting here. 

I'm attempting to make a tank top out of some fabric my mom gave me.  I had one that was starting to wear out so I cut it apart to make a "pattern" of sorts-so I'm working on that right now-feeling kinda tired-the sun will do that to you when you are out in it for several hours. 

I will post pictures once I get it done!  (I will post whether it works-aka fits- or not)

Easy Oreo Truffles

1 pkg. (1 lb. 2 oz) OREO cookies, finely crushed
1 pkg. (8 oz) cream cheese-softened
2 pkg. (8 squares each) semi-sweet chocolate-melted.

Mix 3 cups of cookie crumbs and cream cheese until well blended.  Shape into 1 inch balls.  Dip balls in melted chocolate-place on waxed paper-covered baking sheet.  Sprinkle on "topping" of choice-it can be more Oreo crumbs, finely crushed graham crackers, colored sprinkles (holidays) or anything else you think would be yummy!  I've done the graham crackers and those were yummy, but next time I'll have to try a new idea and experiment with that.

Refrigerate for 1 hour. Keep truffles in fridge until enjoying!

Chicken Stew

2 cooked, cubed chicken breasts
4-5 cooked, diced red potatoes
1 bag frozen, mixed veggies (choose your favorite blend)
2 small cans chicken broth/stock

some flour
spices (I used Mrs. Dash Garlic and Herb blend-salt free)

Combine chicken and stock over medium heat; simmer for 10 minutes.  Stir in herbs, veggies and potatoes.  Cook until heated through.  Stir in flour to thicken sauce.

This is a recipe that I actually found online-but in different measurements.  So instead of just converting them, I guesstimated on the amounts and it turned out very yummy!  One thing that I did was go a little heavy on the spices-they got a little overpowering, so be careful to only add a little at a time and keep tasting it.

You can also add onion in the first step-I did, for a little extra flavor-but then took them out before adding the flour.

Bubble Pizza!

1 jar pizza sauce
2 tubes buttermilk biscuits-quartered
1 lb browned hamburger
1 pkg. pepperoni
shredded cheddar cheese and shredded mozzarella cheese

Preheat oven to 400 degrees. Mix pizza sauce, biscuits, and hamburger together.  Put in 9x13 pan, add pepperoni.  Bake 20 minutes, remove from oven and add cheese.  Bake 10 more minutes. Remove and let stand 5 minutes.

This is a recipe that I first made in high school Home Ec. class.  It is a great recipe for families on a movie night or a Friday night...

Challenge Day 4

Well I don't have pictures for this day because I went home to surprise my mom and dad.  Since I can't go home for Mother's day, I decided to go home now instead.  When I showed up, my mom gave me a great big hug and cried a little; which made me cry a little.

So, I don't have pictures, but I will describe what I wore.  I wore grey leggings, with a black, tiered, peasant-type, twirly skirt that is about knee length.

I wore a pink, half-button up t-shirt with a black sweater-thing over the top since it was rather chilly.

I didn't do a whole lot, just drove home, visited my mom at the library, and then went home and we had pancakes for dinner (one of my favorites) I always have my dad put chocolate chips in mine, yum!

But that's about it for now.  I actually got to bring home my mom's old sewing machine, so I can start making things and repairing things and such.  I'm really excited, I got a few pieces of fabric and patterns too!

Day 3 of the challenge!



Today I am wearing this denim pencil skirt with leggings cause it's a little on the chillier side.  And a bubble tank from Old Navy-I love bubble tanks, they are so comfy and flattering on my body type.

And the ballet flats I got at Payless several years ago-it's probably time I get a new pair. I wear them all the time.

Today I'm just wearing my hair down and letting it air dry-so it will be nice and wavy.

I have class from 1-4 today, but I have to go early to finish a paper.  Then I am going home to surprise my parents, since I haven't been home in awhile.  And since I can't be home for Mother's Day, I will bring my mom's gift home today.  I'm super excited!

Here is my outfit for Day 2 of the Feelin' Feminine Challenge!


The top I can't remember where I got it.

I got the skirt at Old Navy as part of my birthday gift from my parents.  The leggings came from Walmart. 

My hair is just kinda thrown up into a messy bun.

Today I have some errands to run, going to a fair for school.  Then I have Bible Study tonight at 6!

My friend Julie came over and we made Oreo truffles.  We had planned on making them last night, but we ran out of time after the Fairy Tale Ball meeting and dinner, so we made them this morning. They turned out really yummy, and very chocolatey!

Feelin' Feminine Challenge!

So, since I have such a long time off from work, I figured this would be the PERFECT time to do the challenge!  I get to wear skirts or dresses for a week!  I think since today is a little chilly, I will wear my trusty long denim skirt. I LOVE it! 

Ok, not that anyone can tell, but I just paused to actually get actually dressed for the day.  I had been just relaxing in my sweats, since I didn't have anything going on, but now I'm dressed and will take a picture and post it, how about that for technology!  Now, after several attempts to get me WITH my head in the picture...

This is one of my favorite outfits EVER!  I got the skirt at Maurices, with a coupon-I don't remember how much it was...

The bubble hem tank top I got at Target on sale (I should have bought more because I LOVE it); the striped tank I got at JCPenney-it adds a little pop of color to the outfit.

And the black flutter sweater I got at JCPenney also.

You can sort of see my tennis shoes peeking out-I got those at Target for $15 and they are SUPER comfy!

And my hair is just in 2 braids, that way it's "down" but not really in my way at all, although I change my hair several times a day cause I get bored-hehe

My schedule for today includes: dishes, picking up the kitchen, taking the garbage and recycling outside, picking up the living room/cleaning the litter area for Handsome the cat, picking up my bedroom, looking through my things to see what I can donate, what I'd like to perhaps sell at a yard sale, (I am going to specifically see if there is anything I can donate to the Theatre-I have some hats and shoes I will for sure, but I'll check to see if there is anything else I can), and my friend Jules and I are going to make some treats and then go to the Fairy Tale Ball volunteer meeting!  I'm super excited!
